| I only get to have this delicious meal once in a while. It is a cheap cut of meat but when you rub the olive oil on the meat and do not salt it till it is done it is superb. I get the chuck roast and I rub it with olive oil and place in the crock pot. I then pour one can of low sodium beef broth to the pot and then place the frozen stew vegetables in carrots, celery, new potatoes, baby onions and cook on high for 6 hours. It is the most wonderful tasting meal and it is all done in 6 hours. The meat is tender and delicious and the vegetables lends to the flavoring. It is great for left overs and I eat it several days after too. I am blessed to have gotten one from the food bank because it is not in my budget. A friend brought it to me. So on Sunday I will be enjoying this wonderful meal for a few days too. I have to got to Albertson's to get the one package of stew vegetables they seem to be the only ones that carry it. serve and eat and it is ooh la la. | |

| Chicken Noodle Soup. I made chicken noodle soup today. My husband requested it 'cause it's so nutritious and healthy. I buy chicken breast tenders. They are usually on sale when I buy those. I place the tenders in a pot with a large can of chicken broth. I then add a little water and two chicken bouillon cubes. Sprinkle oregano, rosemary, garlic, salt(not much), pepper, sage, parsley seasonings. Chop celery, green onions, carrots and add. Cut vegies any size you like. My husband likes them big. I use the Baby Carrots and cut them three times or in half if they are thin and short. As you cook this all together the chicken will start to fall apart in broth. I use a large ladle spoon to push them down and cut them that way. When the broth starts to boil make sure you lower the flame to simmer. The soup will be done in about 1 1/2 hrs. and that is when you would put in the large wide egg noodles. Make sure that the broth is boiling when you do this. Cook for another 6-7 minutes on boil. We make a large pot and have this for days. Delicious. I will also try your recipe for Chuck Roast, Cami. Batman, there is a great recipe on the lasagna noodle package that you might find pleasing.
